Meatloaf:

Instructions

  1. Make the Glaze: In a medium bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and Dijon mustard until smooth. Set aside.
  2. Sauté the Onions: Heat olive oil in a small pan over medium heat. Add the finely chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant. Remove the pan from heat.
  3. Prepare the Meatloaf Mixture: In a large mixing bowl, combine 1/4 cup of the prepared glaze, Worcestershire sauce, Dijon mustard, paprika, dried thyme, salt, pepper, and eggs. Whisk well to blend. Stir in the sautéed onions and garlic. Add the bread crumbs and ground turkey, mixing gently with hands or a spatula until just combined, careful not to overmix.
  4. Shape and Glaze the Meatloaf: Transfer the turkey mixture onto a greased or parchment-lined baking sheet. Shape it into a loaf approximately 9 inches long and 4-5 inches wide. Brush the remaining glaze evenly over the top of the meatloaf.
  5. Bake: Preheat the oven to 350°F (175°C). Bake the meatloaf uncovered for 55-65 minutes, or until the internal temperature reaches 165°F (74°C). Once done, let the meatloaf rest for 5-10 minutes before slicing and serving.
