Ingredients
Scale
Main Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 2 cups water
- 2 cups Minute Rice, uncooked
- 1 cup salsa
- 1 cup shredded cheddar cheese
Instructions
- Brown the meat: In a large skillet over medium-high heat, brown and crumble the ground beef until fully cooked and no longer pink. Drain any excess grease to ensure a leaner dish.
- Add seasoning and water: Stir in the packet of taco seasoning and 2 cups of water. Mix well and bring the mixture to a boil to allow the seasoning to infuse the beef.
- Cook the rice: Reduce the heat to low, then add the uncooked Minute Rice to the skillet. Stir everything together, cover with a lid, and let it cook for about 5 minutes until the rice becomes tender and absorbs the liquid.
- Finish with salsa and cheese: Remove the lid and stir in 1 cup of salsa and 1 cup of shredded cheddar cheese. Allow the cheese to melt into the mixture for a creamy, cheesy finish before serving.
Notes
- Use lean ground beef to reduce fat content if preferred.
- Feel free to substitute Minute Rice with another quick-cooking rice, adjusting cook time accordingly.
- Add diced onions or bell peppers during the meat browning step for extra flavor and nutrition.
- Salsa can be mild or spicy depending on your taste preference.
- For a lighter option, substitute cheese with a low-fat variety or omit altogether.
