Description

This delightful Strawberry Lasagna is a no-bake layered dessert featuring a crunchy vanilla wafer crust, creamy cheesecake filling, and a refreshing strawberry gelatin layer topped with fresh berries and whipped cream. Perfect for summer gatherings or anytime you need a sweet, fruity treat without turning on the oven.

Ingredients

Scale

Cookie Crust

  • 2 cups vanilla wafers, crushed
  • 6 tablespoons melted butter

Cheesecake Layer

  • 16 oz (450 g) cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup sour cream
  • 1 cup whipped topping

Strawberry Layer

  • 1 package (3 oz) strawberry gelatin
  • 1 cup boiling water
  • 3/4 cup ice cubes
  • 1/2 cup heavy cream
  • 1 cup whipped topping
  • 1 1/2 cups fresh strawberries, sliced

Garnish

  • Additional whipped cream
  • Fresh strawberries

Instructions

  1. Make the crust: Crush the vanilla wafers finely and mix them thoroughly with melted butter. Press this crumb mixture firmly into the bottom of a 9×13-inch baking dish to form an even crust layer.
  2. Prepare the cheesecake layer: In a mixing bowl, beat the softened cream cheese until smooth and fluffy. Add the powdered sugar and continue mixing until well combined. Stir in the sour cream, then gently fold in the whipped topping to maintain a light texture. Spread this creamy mixture evenly over the prepared crust.
  3. Create the strawberry layer: Dissolve the strawberry gelatin powder in boiling water, stirring until completely dissolved. Allow it to cool down and add ice cubes to chill it quickly. Once cooled, stir in the heavy cream and fold in the whipped topping to combine. Finally, gently fold in the sliced fresh strawberries and spread this mixture evenly over the cheesecake layer.
  4. Chill: Place the assembled dessert in the refrigerator and let it set for 4 to 6 hours to firm up. Before serving, top the lasagna with dollops of whipped cream and garnish with additional fresh strawberries for a beautiful presentation.

Notes

  • Use room temperature cream cheese for easier mixing and a smoother texture.
  • Make sure the strawberry gelatin is fully cooled before adding whipped topping to prevent melting and separation.
  • For variation, substitute fresh strawberries with raspberries or mixed berries.
  • This dessert can be made a day ahead to allow flavors to meld perfectly.
  • Store leftovers in the refrigerator covered tightly; best consumed within 3 days.
