  • 4 large flour tortillas

Instructions

  1. Cook mince mixture: In a skillet, heat olive oil over medium heat. Add the chopped onion, minced garlic, and chopped bell pepper. Cook until softened, about 3-5 minutes. Then add the ground beef, chili powder, cumin, salt, and pepper. Cook the mixture, breaking the meat apart with a spatula, until browned and fully cooked through.
  2. Assemble quesadillas: Place one flour tortilla flat in the skillet over medium heat. Sprinkle with a generous amount of shredded cheese. Spoon a portion of the cooked mince mixture evenly over the cheese, then sprinkle more cheese on top. Fold the tortilla in half carefully to enclose the filling.
  3. Cook quesadillas: Cook for 3-4 minutes on one side until the tortilla is golden brown and crisp. Carefully flip the quesadilla and cook the other side for another 3-4 minutes until golden brown and the cheese inside is melted.
