Ingredients
Scale
Bread & Butter
- 2 slices of thick-cut sourdough or your favorite bread
- 2 tablespoons butter, softened
Cheese & Sauce
- 2 slices ghost pepper cheese (or other spicy cheese like habanero jack or pepper jack)
- 1 tablespoon mayonnaise (optional, for extra crispiness)
- 1 tablespoon sriracha sauce (optional, for added heat)
- 1 teaspoon garlic powder (optional, for flavor depth)
Instructions
- Prepare the bread: Spread the softened butter evenly on one side of each slice of bread. This will help achieve a golden, crispy exterior when grilled.
- Assemble the sandwich: If using, spread mayonnaise on the unbuttered sides of the bread slices for added crispiness, then layer the ghost pepper cheese slices evenly on one slice. Sprinkle garlic powder over the cheese, then drizzle sriracha sauce if you want extra heat. Top with the second slice of bread, buttered side out.
- Grill the sandwich: Heat a skillet or griddle over medium heat. Place the sandwich in the pan and cook for about 3-4 minutes until the bread is golden brown and crispy. Carefully flip the sandwich and cook the other side for another 3-4 minutes until the cheese is melted and the bread is equally toasted.
- Serve hot: Remove the grilled cheese from the pan, let it cool slightly, then slice and serve immediately for maximum gooeyness and heat impact.
Notes
- Adjust the amount of ghost pepper cheese or sriracha to control the spice level to suit your heat tolerance.
- Mayonnaise is optional but recommended for a richer, crunchier crust.
- For a smoky flavor, try using smoked ghost pepper cheese if available.
- Ensure to cook on medium heat so the cheese melts without burning the bread.
- Serve with a cooling dip like ranch or sour cream to balance the heat.
