Ingredients
Scale
Vegetables
- 1 lb carrots, peeled and cut into sticks
Seasonings & Oil
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
Whipped Ricotta
- 1/2 cup ricotta cheese
- 2 tablespoons heavy cream or milk
- 1 tablespoon lemon juice
Garnish
- Fresh parsley, chopped (for garnish)
- Honey (optional, for drizzling)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the carrots.
- Season the Carrots: Toss the carrot sticks with olive oil, salt, pepper, ground cumin, ground coriander, and smoked paprika until evenly coated. Spread them out in a single layer on a baking sheet to ensure even roasting.
- Roast the Carrots: Roast the carrots in the preheated oven for 20-25 minutes, flipping them halfway through cooking. They should become tender and develop a slightly caramelized exterior.
- Prepare Whipped Ricotta: While the carrots roast, combine ricotta cheese, heavy cream (or milk), and lemon juice in a food processor. Blend until the mixture is smooth and creamy, creating a light and fluffy whipped ricotta.
- Assemble the Dish: Spread the whipped ricotta evenly on a serving platter. Once the carrots are roasted, arrange them on top of the whipped ricotta layer.
- Garnish and Serve: Garnish the assembled carrots and ricotta with chopped fresh parsley. Optionally, drizzle with honey to add a touch of sweetness before serving.
Notes
- You can substitute heavy cream with milk for a lighter whipped ricotta.
- Add a drizzle of honey for a sweet contrast to the spices and earthy carrots.
- To make this dish vegan, substitute ricotta with a vegan ricotta alternative and use plant-based milk.
- Make sure carrots are cut into similar size sticks for even cooking.
- This recipe works well as a side dish or a light vegetarian appetizer.
