Description

A refreshing and tropical Pineapple Coconut Mojito that combines the zesty flavors of fresh lime and mint with the sweetness of pineapple juice and the creamy hint of coconut milk, all balanced perfectly with coconut rum and fizzy club soda. This brisk cocktail is quick to make and perfect for a sunny day or anytime you want a vibrant, island-inspired drink.

Ingredients

Scale

Ingredients

  • 1/2 lime, cut into quarters
  • 1/4 cup fresh mint
  • 1 ounce coconut rum
  • 2 ounces pineapple juice
  • 1 tablespoon lite coconut milk
  • 2 ounces club soda
  • Ice, as needed
  • Lime wedge, for garnish
  • Pineapple slice, for garnish
  • Fresh mint sprig, for garnish

Instructions

  1. Add lime and mint: Place the quartered lime and fresh mint leaves into the cup of a cocktail shaker.
  2. Muddle ingredients: Using a muddler or the back of a spoon, gently muddle the lime and mint together to release the aromatic oils and lime juice.
  3. Add liquids: Pour in the coconut rum, pineapple juice, and lite coconut milk into the shaker with the muddled ingredients.
  4. Add ice and shake: Add a handful of ice cubes to the shaker, secure the lid, and shake vigorously for about 10-15 seconds until well chilled and combined.
  5. Strain and top: Strain the mixture into a glass filled with fresh ice. Top off with 2 ounces of club soda and gently stir to combine.
  6. Garnish and serve: Garnish the drink with a lime wedge, a slice of pineapple, and a fresh mint sprig before serving.

Notes

  • For a non-alcoholic version, omit the coconut rum and increase pineapple juice by an ounce.
  • Use fresh pineapple juice for the best flavor contrast with the coconut milk.
  • Lightly crush the mint leaves to avoid bitterness.
  • Tilt the glass when adding club soda to preserve carbonation.
  • Adjust sweetness by adding a splash of simple syrup if desired.
