This Pepperoni Pizza Quesadilla recipe combines the classic flavors of pepperoni pizza with the crispy, cheesy goodness of quesadillas. Quesadilla Base
- 4 large flour tortillas
- 1 cup shredded mozzarella cheese
- ½ cup pizza sauce (plus more for dipping)
- 20–24 slices pepperoni
- ¼ teaspoon Italian seasoning
- 1 tablespoon olive oil or butter

- Optional red pepper flakes
- Chopped fresh basil or parsley for garnish
Instructions
- Prepare the Tortillas: Lay two flour tortillas flat on a clean surface. Spread about 2 tablespoons of pizza sauce evenly over each tortilla.
- Add Cheese and Pepperoni: Sprinkle half of the shredded mozzarella cheese evenly over both sauced tortillas. Arrange 20–24 slices of pepperoni evenly on top of the cheese. Sprinkle ¼ teaspoon Italian seasoning and red pepper flakes if you desire a little heat.
- Assemble Quesadillas: Place the remaining two tortillas on top of the pepperoni-covered tortillas to form two complete quesadillas.
- Heat the Skillet: Warm 1 tablespoon of olive oil or butter in a large skillet over medium heat. Make sure the skillet is hot enough to crisp the tortillas without burning.
- Cook the Quesadillas: Place one quesadilla at a time in the skillet. Cook each side for about 2–3 minutes or until the tortillas are golden brown and the cheese inside is melted thoroughly.
- Rest and Slice: Remove cooked quesadillas from the skillet and let them rest for 1 minute on a cutting board. This allows the cheese to set slightly for easier slicing. Slice each quesadilla into wedges.
- Garnish and Serve: Garnish with chopped fresh basil or parsley for a fresh touch. Serve immediately with extra pizza sauce for dipping.
