Ingredients
Scale
Protein
- 4 boneless, skinless chicken breasts
Sauce
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 garlic cloves, minced
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- 1/2 cup sun-dried tomatoes (drained and chopped)
- salt and black pepper to taste
Garnish
- fresh basil or parsley for garnish
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the chicken later in the process.
- Season Chicken: Lightly season both sides of the chicken breasts with salt and black pepper to enhance flavor.
- Sear Chicken: Heat olive oil and butter in a large oven-safe skillet over medium heat. Add the chicken breasts and sear for 3–4 minutes on each side until they develop a nice golden brown color. They do not need to be cooked through at this stage. Remove the chicken from the skillet and set aside.
- Sauté Garlic: In the same skillet with the remaining oil and butter, add the minced garlic and sauté for 1 minute until fragrant without burning.
- Make Sauce: Pour in the chicken broth and bring to a simmer, scraping up any browned bits stuck to the pan to build flavor. Then stir in the heavy cream, grated Parmesan cheese, red pepper flakes, dried oregano, and chopped sun-dried tomatoes. Let the sauce simmer gently for 2–3 minutes until it thickens slightly.
- Return Chicken to Skillet: Place the seared chicken breasts back into the skillet with the sauce and spoon some of the sauce over each piece to coat them.
- Bake: Transfer the skillet to the preheated oven and bake for 15–20 minutes or until the chicken is fully cooked through and reaches an internal temperature of 165°F (74°C).
- Garnish and Serve: Remove the skillet from the oven and garnish the chicken with freshly chopped basil or parsley. Serve hot, ideally over pasta, mashed potatoes, or with crusty bread to enjoy the delicious sauce.
Notes
- Serve over pasta, mashed potatoes, or with crusty bread to soak up the creamy sauce.
- Chicken thighs can be substituted for chicken breasts if preferred; cooking times may vary slightly.
- Adjust red pepper flakes according to your preferred heat level.
- Make sure to use an oven-safe skillet to safely transfer from stovetop to oven.
