Description

This creamy Parmesan chicken skillet combines tender boneless chicken breasts with fresh spinach and sautéed mushrooms, all simmered in a rich and flavorful creamy sauce. It’s a comforting, low-carb, and gluten-free main course perfect for a delicious weeknight dinner.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil

Vegetables and Sauce

  • 8 ounces cremini or white mushrooms, sliced
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon unsalted butter

Instructions

  1. Season the Chicken: Pat the chicken breasts dry and season both sides evenly with salt, black pepper, and garlic powder to build a flavorful base.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5 to 6 minutes per side until golden brown and thoroughly cooked. Remove from skillet and set aside.
  3. Sauté Mushrooms: In the same skillet, add the sliced mushrooms. Cook for 4 to 5 minutes, stirring occasionally, until the mushrooms are softened and browned.
  4. Add Garlic and Spinach: Stir in the minced garlic and cook for 30 seconds until fragrant. Then add the fresh spinach and cook for 1 to 2 minutes until wilted.
  5. Prepare the Sauce: Pour in chicken broth and heavy cream. Stir in the grated Parmesan cheese and Italian seasoning. Allow the sauce to simmer gently for 2 to 3 minutes until slightly thickened.
  6. Combine and Simmer: Return the cooked chicken breasts to the skillet and spoon the creamy sauce over them. Let the chicken simmer in the sauce for another 2 to 3 minutes to meld the flavors.
  7. Serve: Remove from heat and serve the chicken warm, spooning extra sauce on top. This dish pairs well with pasta, mashed potatoes, or cauliflower rice for a low-carb meal.

Notes

  • For a lighter option, substitute heavy cream with half-and-half to reduce richness.
  • This dish complements well with sides like pasta, mashed potatoes, or low-carb cauliflower rice.
  • Use freshly grated Parmesan for the best flavor and texture in the sauce.
  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for food safety.
