  • 1 cup jasmine or short-grain rice (rinsed)
  • 8 cups water or chicken broth
  • 1 teaspoon salt
  • 1 slice fresh ginger (optional)

For the Miso Sauce

  • 2 tablespoons white or yellow miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin or rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon water (to thin, as needed)

Instructions

  1. Prepare the Congee: In a large pot, combine the rinsed rice, water or chicken broth, salt, and the optional slice of ginger. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and simmer uncovered. Stir occasionally to prevent sticking, cooking for 1 to 1½ hours until the rice breaks down into a creamy, porridge-like consistency. Add additional water if needed to achieve your preferred texture. Remove the ginger slice before serving.
  2. Make the Miso Sauce: While the congee cooks, whisk together the miso paste, soy sauce, mirin or rice vinegar, sesame oil, honey or maple syrup, and water in a small bowl until smooth. Adjust the thickness by adding more water if necessary and modify seasoning to your taste.
  3. Serve: Ladle the hot congee into bowls and drizzle generously with the miso sauce. Top with your choice of optional toppings such as a soft-boiled egg, sautéed mushrooms, scallions, shredded chicken, or pickled vegetables for added flavor and texture.
