Ingredients
Scale
Primary Ingredients
- 1 medium fresh pineapple, peeled and cut into bite-sized chunks
- 1 cup shredded coconut (sweetened or unsweetened, based on preference)
Optional Ingredients
- 1/4 cup Greek yogurt (optional, for creaminess)
- 2 tbsp honey or maple syrup (optional, for added sweetness)
- Fresh mint leaves (optional, for garnish)
Instructions
- Prepare the Pineapple: Peel and cut the fresh pineapple into bite-sized chunks. Set any excess pineapple juice aside and place the pineapple pieces into a mixing bowl, ready to be coated.
- Prepare the Coconut Coating: In a separate bowl, combine the shredded coconut with Greek yogurt and honey or maple syrup if using. Mix thoroughly until a cohesive and sticky mixture forms. For a simpler and lighter option, you can skip the yogurt and honey and just use shredded coconut alone.
- Coat the Pineapple: Using your hands or a fork, take each pineapple chunk and thoroughly coat it in the coconut mixture, ensuring all sides are evenly covered. Alternatively, for a lighter version, simply roll the pineapple chunks in shredded coconut until fully coated.
- Chill the Bites: Arrange the coated pineapple bites on a serving platter or tray. Refrigerate for at least 30 minutes to allow the coconut coating to firm up and flavors to meld together.
- Garnish and Serve: Just before serving, garnish the chilled coconut pineapple bites with fresh mint leaves if desired. Serve cold as a refreshing snack or healthy dessert.
Notes
- Use either sweetened or unsweetened shredded coconut depending on your preferred sweetness level.
- Greek yogurt and honey are optional but add creaminess and extra sweetness; skip for a lighter version.
- Chilling helps set the coating and enhances flavor, don’t skip this step.
- Fresh mint garnish adds a pop of color and subtle fresh flavor.
- Store any leftovers refrigerated in an airtight container for up to 2 days.
