Description

These Cheesy Baked Vegetable Rolls are a delicious and easy-to-make vegetarian snack featuring a flaky puff pastry filled with sautéed vegetables and a blend of melted mozzarella and cheddar cheeses. Perfect as an appetizer or light snack, they offer a crispy, golden-brown exterior with a flavorful vegetable and cheese filling.

Ingredients

Scale

Pastry

  • 1 sheet puff pastry, thawed

Vegetable Filling

  • 1 small zucchini, finely chopped
  • 1 small carrot, grated
  • 1/2 red bell pepper, finely diced
  • 1/4 small red onion, finely chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • Salt and black pepper to taste

Cheese

  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Others

  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add the chopped zucchini, grated carrot, diced bell pepper, and chopped red onion. Sauté for 4 to 5 minutes until the vegetables are softened. Season with Italian seasoning, salt, and black pepper. Remove from heat and let the mixture cool slightly.
  3. Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet and cut it into four equal rectangles.
  4. Assemble Rolls: Spoon the sautéed vegetable mixture evenly down the center of each pastry rectangle. Top each with shredded mozzarella and cheddar cheese.
  5. Roll and Seal: Fold the sides of the pastry over the filling and roll tightly into a log shape. Seal the edges by brushing with beaten egg to help them stick.
  6. Prepare for Baking: Place each roll seam-side down onto the prepared baking sheet. Brush the tops with more beaten egg to achieve a golden glaze.
  7. Bake: Bake in the preheated oven for 18 to 20 minutes, or until the rolls are golden brown and the pastry is crispy.
  8. Cool and Serve: Allow the rolls to cool slightly on a wire rack before serving. Enjoy them warm with marinara sauce or ranch dressing if desired.

Notes

  • These rolls can be made ahead and frozen before baking for convenient future meals.
  • Feel free to swap in your favorite vegetables or add chili flakes for some heat.
  • Serve with marinara sauce or ranch for dipping to enhance flavor.
