Ingredients
Scale
Pastry
- 1 sheet puff pastry, thawed
Vegetable Filling
- 1 small zucchini, finely chopped
- 1 small carrot, grated
- 1/2 red bell pepper, finely diced
- 1/4 small red onion, finely chopped
- 1 tablespoon olive oil
- 1/2 teaspoon Italian seasoning
- Salt and black pepper to taste
Cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
Others
- 1 egg, beaten (for egg wash)
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
- Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add the chopped zucchini, grated carrot, diced bell pepper, and chopped red onion. Sauté for 4 to 5 minutes until the vegetables are softened. Season with Italian seasoning, salt, and black pepper. Remove from heat and let the mixture cool slightly.
- Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet and cut it into four equal rectangles.
- Assemble Rolls: Spoon the sautéed vegetable mixture evenly down the center of each pastry rectangle. Top each with shredded mozzarella and cheddar cheese.
- Roll and Seal: Fold the sides of the pastry over the filling and roll tightly into a log shape. Seal the edges by brushing with beaten egg to help them stick.
- Prepare for Baking: Place each roll seam-side down onto the prepared baking sheet. Brush the tops with more beaten egg to achieve a golden glaze.
- Bake: Bake in the preheated oven for 18 to 20 minutes, or until the rolls are golden brown and the pastry is crispy.
- Cool and Serve: Allow the rolls to cool slightly on a wire rack before serving. Enjoy them warm with marinara sauce or ranch dressing if desired.
