Description

This classic Blueberry Crisp recipe features a luscious blueberry filling topped with a buttery, crumbly mixture baked to golden perfection. Perfect for a comforting dessert with a balance of sweet and tart flavors, served warm or at room temperature.

Ingredients

Scale

Blueberry Filling

  • 4 cups blueberries
  • 2 tablespoons flour
  • 2 tablespoons sugar

Topping

  • 1 cup sifted flour
  • ½ cup butter
  • 1 cup sugar (granulated)
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder

Instructions

  1. Preheat the oven. Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature for baking the crisp perfectly.
  2. Prepare the blueberry filling. In a large bowl, toss the blueberries with 2 tablespoons of flour and 2 tablespoons of sugar until they are well coated, which helps thicken the filling as it bakes.
  3. Assemble the filling in the baking dish. Transfer the coated blueberry mixture evenly into a buttered 8×8 inch baking dish, spreading it out to make an even layer.
  4. Make the crisp topping. Using a pastry blender, cut together 1 cup sifted flour, ½ cup butter, 1 cup sugar, ½ teaspoon salt, and ½ teaspoon baking powder until the mixture becomes crumbly. Then stir in ½ teaspoon vanilla extract to add flavor.
  5. Add the topping. Evenly sprinkle the crumbly topping over the blueberry mixture in the baking dish to cover it completely.
  6. Bake the crisp. Place the baking dish in the preheated oven and bake for 45-55 minutes, or until the topping is golden brown and the blueberry filling is bubbly.
  7. Cool and serve. Remove the crisp from the oven and let it cool on a wire rack for about 30 minutes before serving to allow the filling to set slightly.

Notes

  • For extra flavor, add a pinch of cinnamon or nutmeg to the topping mixture.
  • Serve with vanilla ice cream or whipped cream for a delightful dessert experience.
  • Fresh or frozen blueberries can be used; if using frozen, do not thaw before mixing.
  • Make sure the butter is cold when mixing the topping to achieve a crumbly texture.
  • Store leftovers covered in the refrigerator and consume within 3 days.
