Instructions

  1. Prepare the oven and baking dish: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Combine rice and vegetables: Spread the rinsed rice evenly in the baking dish. Add the vegetable or chicken broth, finely diced onion, diced red bell pepper, and frozen peas. Stir gently to distribute the ingredients evenly.
  3. Season the fish: In a small bowl, mix together olive oil, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper if using. Rub this seasoning mixture evenly over the fish fillets.
